Pineapple Banana Sorbet

 I love sweets!  A LOT!  And for some completely crazy reason, I decided to participate in an "Eat Less Sugar" challenge for the entire month of May.  Let me remind you that I have been "off challenge" for the last two weeks, and it has taken every bit of will power and determination that I possess to pass on the Mother's Day cakes and pies, birthday treats, movie candy, date night desserts, raspberry fritters and the frozen Butterfinger that calls my name from the freezer almost daily.  In fact, I can hear it right now!  Oh dear!!

 Needless to say, I have been in search of something "healthy" to satisfy my cravings and help me remain "sweets-free."  I found this recipe on Pinterest and decided to give it a try.  I'm always a little leary of recipes that contain no sugar and still claim to be delicious, so my expectations were set pretty low.  I was pleasantly surprised to discover that this was really good (and incredibly easy)!  Here's the recipe (originally found here!)     

 

Pineapple Banana Sorbet

 

1 whole ripe pineapple, peeled and cored

2 ripe bananas (we also recommend peeling these)

1/2 cup greek yogurt

4 tablespoons honey

Mix in blender and freeze.

 

I halved this recipe and it made about a quart of sorbet.  In order to get it nice and smooth, I blended it for at least 5 minutes in the food procesor.  (I didn't have time to let it freeze all the way, but it should end up looking more like ice cream). 

 After making (and loving) this, I decided to try it once more using strawberries in place of the pineapple...

 

pineapple1 It was even BETTER!!  I used a pint of fresh strawberries, 1 banana, 1/2 to 3/4 cup of greek yogurt and 2 tablespoons of honey.

So YUMMY!!  Now, if I can only find a recipe with no sugar that tastes just like a Butterfinger...
