I am about to change your life...okay that may be a little dramatic, but this recipe is amazing.  Not only does it taste DELICIOUS and is good for you, but it is the easiest, most simple recipe EVER...like unbelievably simple.  This Chicken Taco Soup takes about 30 minutes from start to finish and is my go-to recipe for those days when I look at the clock at 5 pm and realize I haven't even begun to think about what's for dinner.  I almost always have the ingredients on hand and my kids devour it...win-win!! This was a meal that I kind of just threw together after reading someone's reply to the vegetable Hot Topic about how they use cauliflower in the place of rice.  I was a little skeptical cause I'm not a big fan of cauliflower and think it has a pretty strong flavor that is very difficult to hide.  But, I figured the only harm in giving it a try was having my kids go to bed hungry that night!!!
