I did it! I managed to make an entirely gluten-free meal and guess what?! It wasn't as painful as I expected to be! The more I focused on FRESH, the easier it was! Being Mother's Day, I didn't end up taking a lot...er...any pictures of well...anything but I did discover some new recipes that our gluten-free friend really enjoyed. I don't even think she was just trying to be polite either. ;)
I'm definitely planning to share the Garlic-Lemon Grilled Chicken recipe, but was afraid this post might be too long if I tried to sneak it in, so look for it in the next few weeks! It is delicious, super simple and quick (everything I ever want in a recipe).
Today I'm sharing the recipe shared last week by reader, Winnie Chang.
She found it on allrecipes.com, which is a fantastic site by the way. I've seen several different versions of this basic recipe so it's very easy to play with! Try adding sweets to make it a real indulgence or leave them out and substitute applesauce for the oil, although there's not much in there, to make it even more healthy.
I will admit that I did not have high expectations for these brownies since they are well...beans rather than butter and pure sugar, but for beans...they were MUCH better than I thought they would be. Our guest requested I copy the recipe down for her and declared she would be making them the next day! haha. And I was pleasantly surprised to find that my kids loved them! Of course, they loved them more with a small scoop of vanilla ice cream, but hey, who doesn't? I think this next image speaks for itself.
We'd love to try out and share more of your families favorite recipes! Feel free to submit your recipe and you might find it featured in a Tuesday Try It!
