Black Bean Brownies

I did it!  I managed to make an entirely gluten-free meal and guess what?!  It wasn't as painful as I expected to be!  The more I focused on FRESH, the easier it was!  Being Mother's Day, I didn't end up taking a pictures of well...anything but I did discover some new recipes that our gluten-free friend really enjoyed.  I don't even think she was just trying to be polite either. ;)

I'm definitely planning to share the Garlic-Lemon Grilled Chicken recipe, but was afraid this post might be too long if I tried to sneak it in, so look for it in the next few weeks!  It is delicious, super simple and quick (everything I ever want in a recipe).

Today I'm sharing the recipe shared last week by reader, Winnie Chang.

She found it on, which is a fantastic site by the way.  I've seen several different versions of this basic recipe so it's very easy to play with!  Try adding sweets to make it a real indulgence or leave them out and substitute applesauce for the oil, although there's not much in there, to make it even more healthy.  

I will admit that I did not have high expectations for these brownies since they are well...beans rather than butter and pure sugar, but for beans...they were MUCH better than I thought they would be.  Our guest requested I copy the recipe down for her and declared she would be making them the next day!  haha.  And I was pleasantly surprised to find that my kids loved them!  Of course, they loved them more with a small scoop of vanilla ice cream, but hey, who doesn't?  I think this next image speaks for itself.
