Remember a few weeks ago when I was given the task of preparing a gluten-free meal and I promised to share the chicken recipe? Well, here it is! I have to say, I'm a little at a loss as to what to say about the preparation of this main dish. It is literally as simple as it looks! Which is also why I really, really liked it.
The bonus was having every single person enjoyed it, yes, even the finicky 2-year-old in my house! I found the original recipe here and made minor adjustments (more garlic...) to suit my taste, but otherwise a fantastic base for a delicious, healthy meal. With the simplicity of this recipe, you could literally turn it into your own with the addition of just a few key spices!
