I've been a bit lazy in my menu planning the past few months using all the awful, no-good EXCUSES (let's just be honest about what they are, shall we?) for why I couldn't eat quite as well as I have in the past.  You've heard them.  You've probably said a few of them yourself.  "I'm too busy.  I'm too tired.  It's so much work!"  Yada yada yada... you know what I'm talking about.  Well, NO MORE!  I'm done with the excuses and am ready to amp up my energy by ditching the processed foods and eating well!  

 First step?  Making a menu plan of different "clean eating" recipes.  Fyi -  "clean eating" is really just a trendy label for eating REAL food.  So, I got my list together, bought a beautiful eggplant for the occasion and went to work on making Eggplant Pizzas.  I found a few different versions on Pinterest to play around with.  My thinking was if it had "pizza" in the name of the recipe my girls would be certain to give it a try, and I was right, they did, in fact, try it.  

I was pleasantly surprised by this recipe.  I thought the eggplant would be too "spongy" for me, but after roasting and topping it with the sauce and cheese it was not too noticeable.  I would definitely make this again for myself.  My children on the other hand.... probably not.

I will say that when I asked their opinion they couldn't have been more polite.  My oldest (10 yrs) says, "Mom, I still like you and I don't want you to think I don't ... but this new recipe?  Well... I don't like it.  But I still like YOU!!".  Well, done child.  Well done.
