We eat a lot of hot breakfasts at our house and my kids LOVE pancakes. I don't necessarily love them because they don't pack the nutritional punch I'm looking for in the morning, mostly just a lot of calories from carbs (flour, syrup, yada yada...). So we decided to change it up a bit! Sometimes we'll put away the "prepared mixes" and make Oatmeal or Cornmeal pancakes instead from scratch using wheat flour. Then, the best part is instead of dousing it in syrup we'll top it with fresh or home canned fruits (low, low sugar) such as peaches, raspberries or unsweetened applesauce! It's a great way to swap out the extra syrup calories for the fruit we were planning on eating anyway. My kids have also experimented with different yogurts and liked that, too.
