I found myself with a couple of VERY brown bananas on my counter the other day.  This happens A LOT at my house since I'm very picky about eating bananas plain.  They have to be the exact right amount of ripe-enough but not-mushy, and that period in a banana's life lasts exactly 11 seconds!  Since I'm not great at eating a bunch of 6 bananas in 11 seconds, I often have a number of too-ripe bananas on my counter waiting to be mashed to bits and added to a baked good or frozen for smoothies.  This week's culprits ended up in a muffin experiment which turned out pretty tasty, if I do say so myself!  These are Banana Applesauce Whole Wheat Muffins...

Out of curiosity...how do you eat your bananas?  My MIL likes them with some brown spots on them cause they're "so much sweeter," but oh, the mush...I can't handle it!!  Do you like them over or under-ripe, or are you like me and can only handle them in that 11 second window of perfect deliciousness?
